More Soup..This Time With Carrots!

Did another fridge veggie roundup and population control event.  Roasted all them veggies before they zombified and fought back.

I primarily used a crap load of carrots, plus leek, shallots, squash, and sweet potato.  Lightly coated with olive oil, salt, freshly ground pepper, and chili powder, then roasted in a 500 degree oven until ready.

I didn’t bother adding much of anything after that.  Let it cool a bit, dumped it in a blender, blended mostly smooth, put the blended mix through a strainer (not even necessary, purely a textural thing), then mixed in a little greek yogurt while heating it back up.

Topped with fresh spinach, Greek yogurt, and a few drops of hot sauce.
