Just for the Halibut

Currently grinding out Nanowrimo (43,000 words done already!), but managed to cook some fish a while back.

Just before Thanksgiving as a matter of fact.  Seems like a lifetime ago.  Nevertheless, it’s not too late for me to post about it.

Took a couple halibut filets, lightly coated them with olive oil, then pressed an herb/spice coating on the fish.  The coating was composed of cilantro, minced garlic, lime juice, olive oil, green onion, salt and pepper.  Any sort of herby thing would work.

Baked in a pan in the oven, 375 F for about 10 minutes.

Served on a bed of black rice and topped with a bit of the coating mixture, plus persimmon, carrot slivers, tomato, and cucumber.

The second filet was destined for use in fish tacos, which were damn good.
