More Taters!

Just a little quickie.  Everyone loves an afternoon quickie, right?

I had a passel of potatoes.  The tiny ones got cut from the herd and used to make a quick and dirty batch of smashed taters.

Steamed them, of course.  I won’t even mention the part where I pushed too hard on the half-collapsed, collapsible steamer basket while fork testing and splattered hot water all over my chest (wait a minute, did I just type that?).  Yes, I was cooking shirtless.  Let this be a lesson to all you extreme chefs!

To add a touch of tremendous, I roasted some hard stem garlic.

Mashed it all up with some good salt and freshly ground pepper, then added in greek yogurt for some silky smoothness and chopped parsley for color and some tiny bit of hidden bite.

Now, nobody really needs special fancy-dancy cooking tools.  But, gosh darn it, that masher makes quick work of potatoes and it’s fun to use.  I love smashing stuff.

Nothing monumental happened here today.  However, simple recipes, done right and using good, fresh ingredients can be magically delicious.
